Any barbecue recipe can easily be modified to suit one’s tastes. Much of the fun of barbecue cooking is the chance to experiment.

Unlike other forms of cooking, in barbecuing, you can vary the ingredients you cook with (type of wood chips for example) and not vary the recipe and get a whole different taste from the finished product.

Grilling Corn on the Cob | Nothing Tastes Better

Just the thought of grilling corn on the cob makes my mouth water. Of course the best corn is grown in the north and when it is fresh picked and then cooked the same day – so goooood.
Corn on the cob can be cooked many ways. However, my favorite is grilling. Even if you are not going to cook any other food on the grill, grilling corn on the cob alone is worth the time and energy.

First you will need to cut off the corn silk and husks near the end of the corn. Peel off any loose husks. Cut the stem near the other end. Fill your sink with cold water and let the corn soak in the water for 30 – 45 minutes. About 15 minutes before you are ready to cook the corn turn on your grill. You want the temperature to be around 400 degrees for grilling corn on the cob.

Open the hood and place the corn on the warming shelf so the corn extends out over the edge of the warming shelf. Close the hood. About every 5 minutes, open the hood and rotate the ears of corn 180 degrees. You can also move the corn taking the ear at the end and putting it at the beginning. Slide all the other ears down one space. This allows all of the ears of corn to cook evenly regardless of the hot spots in your grill.

Use a set of prongs to turn and move the corn as they will be very hot. The corn will be cooked in 30 – 45 minutes. The actual time depends upon your grill. You can tell when the corn is cooked because the leaves will dry out and become brittle. Some of them may even turn black on the tips and fall off. It is difficult to overcook, so if in doubt let the corn cook five minutes longer.

Using the tongs to remove the corn from the grill warming shelf. You can serve the corn in the husks and let each person shuck their own. Or shuck them all and serve piping hot. Leaving the husks on will keep the corn hotter.

Lather the corn with butter, salt and pepper – um um so gooood. Grilling corn on the cob using this method really makes the corn tender without being water logged. Cooking the corn this way also makes tough corn tenderer. Try it – you will be amazed.

Grilling Pork Chops | Simply Scrumptious

Grilling pork chops over charcoal will produce some of the best tasting pork chops you have ever eaten. You must be careful to not overcook the meat as there is a tendency when cooking pork chops to keep them on the grill too long. This will make the chops too dry. The grill needs to be hot – very hot. Cooking time will vary depending upon the thickness of the meat. Pick chops that are approximately 1/2″ thick.

Rub them with this rub recipe for an outstanding flavor.

  • 1 tbsp. ground cumin
  • 1 tbsp. chili powder
  • 1 tsp brown sugar
  • 1 tsp ground black pepper
  • 4 Pork Chops with bone

Combine all of the above ingredients in a bowl. Mix and apply to the meat. Let the meat absorb the rub for about an hour in the refrigerator. Make sure they are cold when you place them on the grill.

Place the chops on the hottest part of the grill. Cook each side until browned (approximately 4 or 5 minutes depending upon thickness of the meat). Remove the pork chops from grill and let them rest for about 5 minutes before serving.

Barbecue Rotisserie Cooking Recipe

Rotisserie cooking recipe. Most grills will have a rotisserie attachment that will allow meat to be cooked on the rotisserie. Rotisserie cooking is different in that the meat rotates continuously during the cooking process meaning that the meat will be cooked uniformly on all sides through the center.

Rotisserie cooking in a gas grill can be done all year in all kinds of weather. Grilling a roast or a chicken is very easy. Make a catch tray from aluminum foil and place the tray below the meat or chicken being cooked. This will catch all the juices that come out of the meat being cooked. It will prevent flame outs and make clean up very easy. This tip can be used with every rotisserie cooking recipe.

Once you select the product to be used for the rotisserie cooking recipe, insert the metal holder hooks into the two sides of the meat or chicken. Slide the main skewer through the meat or chicken. Put the meat on the skewer into the rotisserie motor on the grill. There should be an adjustable weight that can be used to balance the meat or chicken as it turns.

Rotisserie Cooking Recipe | Rotisserie Chicken

There is nothing better than a chicken cooked on a spit rotisserie cooker. If your grill has a rotisserie attachment, make sure you use it to rotisserie a chicken.

First using a piece of wet string or wire secure the legs and wings close to the body of the chicken. This makes the chicken symmetrical as it turns and will cook evenly.

Make a tray from aluminum foil and place below the chicken so that it will catch all of the emitted juices. If you are using a gas grill, turn on the rotisserie burner. Most will have a weight adjuster attachment to assist with the balancing of the chicken as it turns.

Cook at a high heat for about 25 minutes per pound. Depending upon the size of your grill, you can also ignite the outer two burners on the grill at a low heat. Close the cover and let cook the desired time.

Barbecue Rib Recipe | Simply Delicious

Barbecue Rib Recipe – just the thought of cooking barbecue ribs makes my mouth water. There is no better taste than properly cooked barbecue ribs. Of course there are many different ways to cook barbecue ribs – smoked or grilled.

Smoking barbecue ribs over low heat produces the most succulent meat that will literally fall away from the bones. Smoked barbecue ribs will take from 4 – 5 hours of cooking time.

If you have a barbecue grill with a hood, you can close the hood and maintain a low temperature.

This process will create the smell and taste of a smoked barbecue rib recipe. Again, use low heat and let the barbecue ribs cook slowly. As you raise the temperature, the barbecue ribs will cook faster but will not be as tender.

One way to reduce the cooking time is to par boil the ribs prior to putting them on the grill. Par boiling takes a about 30 minutes and will significantly reduce the cooking time of the barbecue rib recipe on the grill.

In either case, use your favorite barbecue rub and apply to the ribs generously. Let the ribs sit for an hour or two to soak up the flavor of the rub before you start to cook them. If you are going to par boil the ribs, apply the rub after parboiling.

If you do not have a barbecue rub or special barbecue sauce, this barbecue rib recipe below will make one for you.

  • 2-3 slabs of baby-back pork ribs
  • 1/2 cup lemon juice
  • 1 cup barbecue sauce (standard grocery brand)
  • 2 tbsp. Worcestershire sauce
  • 1 1/2 tsp garlic salt
  • 1 tsp onion salt
  • 1 tsp black pepper

Wash and rinse ribs. Dry with paper towels. Place the ribs in a large pan. Sprinkle the garlic salt, onion salt, and black pepper evenly over the ribs. Mix the lemon juice, barbecue sauce and Worcestershire sauce in a bowl. Pour over the ribs. Let the ribs set in a cool place (refrigerator) for a minimum of an hour. If you have time the ribs can set overnight.

Cook meat slowly. When the ribs start to get tender, brush and turn ribs on both sides often. When the meat begins to pull away from the bones – the barbecue ribs are done. Remove from heat and serve.
